Best practice (imo) is to just accept that the last little bit of whatever you’re slicing is not going to be finished up on the mandolin, thus not getting your fingers too close to the blade to begin with.
If only it came with some kind of device for holding the food you’re slicing!
Good thing food doesn’t come in weird shapes that might not fit such a device!
Many do, but those tend not to work very well.
