Starch is the nourishing part in a lot of our staple foods (potatos, cereals etc.) and easily digestible. Cellulose is a major component of wood (and cotton and paper) and of what we call “fiber” in our food, the stuff we cannot digest.

To add one datapoint: I actually installed LibreOffice just now just to try it out. I went via
Format > Page Style > General [this tab was open by default] > Orientation: Landscape
If that is the correct way, then it was, IMO, hard to miss and fast to find. If it was the wrong way*, however then I’d say I find the menu labels misleading.
*I am not quite sure, because the dialogue had the Title “Page Style: Default Page Style”, so I would have expected pages in all new documents to now start out in landscape orientation, but I opened a new document, and the page was in portrait orientation. So, I think I did what I tried to do - change orientation only in the current document - in spite of that (misleading, thus proving your point?) dialogue title.

Vote with my money - only ever buy books outside of Amazon, which is easier here in Germany, as the price for domestic books is fixed. For other products I could do more; I try to be more aware about which brand is European and choose those if the price difference is not too crass (like recently buying USB chargers from Intenso despite the higher price point).
I do talk with friends, family, colleagues about these topics. Now that I finally joined the Fediverse after years of “I’ll have to look into that”, I am asking around about that and already had some others look into it. I am positive some will join one of the platforms.
However, I am not involved in any organized movements and I do not have stickers (which I would use if I had them) or flyers (which I probably would not carry around).
As to your point
- I have friends moving off Meta etc., but it all seems… sporadic and unorganized. Without collective movement at colleges and campuses I don’t see how these things will ever actually grow.
… I am more optimistic about that. A lot of people are more or less consciously aware that the US-based data miners might not have our best interest in mind. Every one of us that migrates can do a lot in their own sphere of influence simply by telling people about it and encouraging them to maybe, for now, just add another platform, have a look around.
E.g., it took some years, but more and more people in my circle use signal, and some of them exclusively. Why could it not be similar for feddit/lemmy, mastodon and pixelfed*. Hell, just tell them they might still get their preferred user name if they sign up now!
* except for the atrocious loading times
