I get that WhatsApp is not a platform to use if you care about your privacy, but WTF is “Delta Chat” and why would I switch to it rather than say Signal?

We’re building a new federated social media universe to distribute it rather than it being centralised in a few single companies like Meta and Reddit. It consists of several different service ideas like Lemmy, Mastodon and PeerTube, over 40 in all. Each of those has hundreds of different instances where little and larger communities share with each other and with other communities and services. We call this Federated Universe the fediverse. So, you are attempting to “solve” analysis paralysis by using invites?
That doesn’t appear to make any sense. It doesn’t really matter which instance someone joins. The whole network is federated. You can access all the content from anywhere.
