TL;DR: We're launching a new edition called "GNOME OS Preview", which is built from the latest stable GNOME release. This means that GNOME OS is no longer just a nightly OS for GNOME developers and testers!
Gnome OS is actually based on the Freedesktop SDK, the same base system as most flatpaks are built from (Gnome SDK, KDE SDK, etc. are derivatives of this), with everything else necessary for a complete system on top, each component a Buildstream element. Pretty neat to see how everything comes together - https://gitlab.gnome.org/GNOME/gnome-build-meta/-/tree/master/elements?ref_type=heads
